The new “Aunt Jemima” pancake mix guarantees that any idiot can make waffles or pancakes that look light, fluffy and edible - the trouble is that the results are also rubbery.  “Rotten Tomato Award” to Aunt Jemima.

Remember when Coca Cola changed their formula and people went berserk.  So they brought back the original recipe with “Classic Coke”.  Well, that’s what Aunt Jemima should do.

So, I set out to find a basic recipe that would replace Aunt Jemima.  “School Morning Waffles” fits that concept and uses Bisquick.  The only difference between the recipe on the back of the Bisquick box and this recipe is “buttermilk”.  Use the buttermilk, instead of regular whole milk, and enjoy yourself with minimal effort and bother.


In seeking an Aunt Jemima replacement recipe, I also discovered “Lemon-Poppy Seed Waffles With Blueberry Sauce”, which are better than IHOP’s.  But the crowning glory is the Blueberry Sauce.  That’s IHOP’s secret: their sauces, not Smuckers, which some pancake houses use.  Jams and such are just too sweet and cloying for my taste.

First, the “Show-Off Your Culinary Skills & Leave Them Gasping **** Waffles.

I- Lemon-Poppy Seed Waffles With Blueberry Sauce

LEMON-POPPY SEED WAFFLES
WITH BLUEBERRY SAUCE

These light waffles would also be good with maple syrup if you prefer. (4 Servings)

BLUEBERRY SAUCE
1        pound frozen blueberries, thawed, undrained
1/2     cup plus 2 tablespoons apple juice
1/2     cup sugar
1        Tablespoon cornstarch
1        Tablespoon fresh lemon juice


LEMON-POPPY SEED WAFFLES
Basic                          ................................... Double Recipe
1.5      cups all purpose flour                           3 cups
6        Tablespoons sugar                               12 Tblsps
2        Tablespoons poppy seeds                    4 Tblsps
1.5      teaspoons baking powder                    1 Tblsp
1        teaspoon baking soda                           2 tsps
,25     teaspoon salt                                        .5 tsp
3        large eggs                                             6
1.25   cups buttermilk                                      2.5 cups
.25     cup (.5 stick) unsalted butter, melted    1 stick
1        Tablespoon grated lemon peel              2 Tblsps

FOR BLUEBERRY SAUCE:
Bring blueberries, .5 cup apple juice and sugar to boil in heavy medium saucepan. Simmer over medium heat until reduced to 2 cups, about 15 minutes. Dissolve 1 tablespoon cornstarch in remaining 2 tablespoons apple juice and add to blueberry mixture.  Add lemon juice.  Bring to boil, stirring constantly; simmer until thick, about 1 minute. Cool slightly.
(Can be made 2 days ahead. Cover and refrigerate.  Re-warm over medium-low heat before serving.)


FOR LEMON-POPPY SEED WAFFLES:
Whisk first 6 ingredients in large bowl to blend. Whisk eggs, buttermilk, melted butter and lemon peel in small bowl to blend.  Add buttermilk mixture all at once to flour mixture and whisk until blended.  Let mixture stand 15 minutes.

Preheat waffle iron according to manufacturer’s instructions.  Spoon batter onto waffle iron. Cover and cook until golden and cooked through, about 7 minutes (cooking time will vary, depending on waffle iron). Repeat with remaining batter.  Serve immediately with warm blueberry sauce.

School Morning Waffles
A batter way to wake up youngsters…simplified with biscuit mix, waffles are crisp & light

Nonstick vegetable cooking spray or stick butter for lubricating waffle iron

Basic    Recipe        Double
2C        Bisquick       4C
1.5C    buttermilk      3C
1         large egg(s)   2
2T      vegetable oil   4T

1. Preheat electric waffle iron; mist with cooking spray or cover interior with butter       

2. Beat eggs with a fork   

3. Measure Bisquick; pour into mixing bowl

4. Measure buttermilk; add vegetable oil to buttermilk

5. Stir beaten egg(s) into liquids

6. Pour liquid, all at once, into mixing bowl with Bisquick; stir with fork just until liquid incorporated into Bisquick

7. Using 1-cup measuring cup, ladle batter onto hot waffle iron, spreading out to prevent overrun during baking

8. Close lid and cook until green light comes back on, indicating waffle is done (3-5 minutes)   

Serve with butter, maple syrup and/or blueberry sauceThe blueberry sauce is the "piece de resistance" - the "WOW" factor.  I suggest you eat yours without syrup - you won't need it!





Want a “Knock ‘Em Dead Syrup Recipe” for School Morning Waffles?
You can make enough for 2-4 breakfasts and refrigerate until needed.
You won’t need it for the **** recipe.  Syrup, if you insist on it, should be very basic for that scene-stealer.



Tapping your own maple syrup and processing
it is one way –but I know a better way.


III- Pecan Maple Sauce


Pecan Maple Sauce
S: Bon Appetit, 12/91, Susan Rosenfeld of Savoy Restaurant in Manhattan
Ladle sauce into glass jars.  Serve over ice cream, waffles & pancakes.

1.25C   pure maple syrup
 .75C    dark corn syrup
2T        bourbon
1T        butter
1.5C     coarsely chopped toasted pecans
1C        whole toasted pecans

1- Bring first 4 ingredients to boil in heavy medium size saucepan
2- Stir in chopped and whole pecans
3- Cool slightly

Can be prepared 1 week ahead.  Spoon into jars and refrigerate.  Re-warm over low heat before serving.

Thanks for Google PR lead. I didn't even know it existed. I guess 600 hits per day for month of December helps. I also guess that content, which leads to traffic, is more consequential than appearance.

I've tried to improve appearance, but not much luck. If I stop publishing to study blogging technique, my 600 will drop to 300 in a few days - Trust me!

Any help will be appreciated, but I have to keep blogging.
